What I have done over the years, is practice losing control, and trying to get it back (not on roads, parking lots), I used to do it all the time in the winter in my beater cars, after a fresh snowfall when the road is at it's worst. I'd get up enough speed, then slam the car sideways so it'll start to fish tale, then try to get it back. Counter steer in the direction you want the car to go. Sorta as zleepertt put it, steer in the same direciton the rear is going. Usually, when the car is fish tailing, chances are that the rear is going out, and making the front point in the wrong direction, so counter steer to point down the road. Don't OVERCORRECT, so don't go to 'locking point' of the steering wheel. Just counter enough to point the wheels where you want them to go. As you are doing this, you pump the brake pedal, and push in the clutch. You should never slam the brake immediately, just get off the gas, if you're gone back and forth a couple times and have reduced the speed, then after you've already done a few pumps, time to hit the brakes. I've saved myself and a couple of cars with this method, although I've never been pro-trained or anything, I'm sure it could use some tweeking to get it perfect.
